P90X Diet

My husband and I just started the P90X program. I love the workout, but hate the diet. I am doint the Fat Shedder - Level 1 and my husband is doing level 2. I have cannot begin to finish all of the food on my plate, therefore a lot of food is getting wasted. Some of the recipes tend to make me feel a bit sick at my stomach. I need a simple diet that doesn't take much thought due to our busy lifestyles. Am I doing something wrong? Any suggestions? Thanks
