White sauce is a little different, but made the same way. Instead of butter you use meat grease/lard/whatever you want to call it. Technically it's all gravy, but "biscuits and gravy" calls for sausage grease or bacon lard.
I would love some of my own recipe of meatloaf or meatballs right now, but the live-in boyfriend won't eat ground meat (texture.) Take a pound of ground beef, add an egg, and then add instant mashed potato flakes, Parmesan cheese, and italian flavor bread crumbs until the liquid is absorbed but it holds together. Bake at about 350 until done! Add slices of Velveeta (that's processed cheese that comes in a block and melts well. Tastes roughly like heaven.) and ketchup after slicing, or form into balls before baking for meatballs. Yummo 
I'm actually coming up with a lot of new stuff now that I have a someone to cook for. Try porkchops, baked at 450 for 20 minutes, with this sauce:
2 parts applesauce, 3 parts lemon juice, 1 part mustard. Eyeball it, and pour it on before cooking. I haven't tried it as a marinade yet.

Wicked, I have never tried adding mustard to sauces, I am beginning to think Australians make things the old fashioned way, I definately almost always have "Granny smith apples", cooked with a little sugar and mashed with my Pork chops (haha guess what I took out of the freezer for dinner tonight, before I read this!!

As for meatloaf, not really a fan but meat balls, your making me hungry god damdddd itttt..
