			<title><![CDATA[CHICKEN & SWEETCORN SOUP (chinese style)]]></title>

5 chicken legs, or thighs
3 cans of mushed sweetcorn
1 can of whole corns
2 tablespoons of chicken stock
1 egg 
 
Boil the chicken on low in water for around 1hr to 1 & a half hours until the chicken falls of the bone by itself.
 
Take the chicken carefully out of the water and disregard the fat, skin, bones and shred the pieces small.  Place them back into the water, ensure water is on low now. Add the chicken stock and sweetcorn and stir until a cream texture appears, if too much water, add another can of the mushed corn.
 
Add an egg and stir around the egg gently until the white of the egg starts to show and separate across the top, keep water on low. The yolk is option to keep in there, once cooked.

			<description><![CDATA[Don't like to have too many threads, so this a general catagory, we already have Candy, cakes & cookies. So here's a place for the rest of the world of desserts
 
Raspberry Salad
 
1 lg package Raspberry Jello
1-2/3 cups boiling water
1-1/2 cups applesauce
1 package frozen Raspberries (comes 8 to 12 oz in a package)
1 cup (or more) walnuts
 
1- 12 oz container sour cream
1-1/2 cups mini marshmallows
 
Put Sour Cream in a mixing bowl, stir in marshmallows. Cover and set in fridge. I usually do this the night before. Use electic mixer to whip up before spreading on jello mix.
 
Pour jello powder into large glass cake pan ( 13x9 or so). Add boiling water and stir until disolved. Place in refrigerator until starting to set (usually about an hour). Add applesauce, raspberries and walnuts. Stir in.
Let set up. If you let the jello set up too long before adding applesauce you can use a mixer to salvage it- won't be quite the same texture but still tasty.
 
When set spread on sour cream mix.

			<title>North Indian Veggies.....Potatoes and Cauliflower in savory spices</title>

			<description><![CDATA[Here's an all veg recipe for you guys.

The dish is properly called Aloo Gobi.  (ah-loo go-bee)
It's basically potatoes and cauliflower prepared fried in a wok. It goes very well with yogurt and some type of bread. 

Here is the way I prepare it. 

You need:

1 medium sized cauliflower 
1 medium onion diced
Olive Oil
Salt to taste
Pepper to taste
1/4 cup of tomato paste
1 inch Diced Ginger
3 Cloves Diced Garlic
Cumin - 1 teaspoon
Turmeric - 3/4 teaspoon
Garam Masala 1/2 teaspoon- You can get this at any asian market
Cayenne Red Pepper to taste- Use sparingly!
1 fresh green chile chopped
Fresh Cilantro chopped

Procedure:

-Boil the potatoes in their skins and allow to cool. Cut into about 1.5-2 inch squares. It is important that they are all around the same size to ensure uniform cooking.
-Soak cauliflower in boiling water for 2 minutes....just two...if it is overcooked it will become too soft.
-Cut cauliflower into 2.5-3 inch pieces.
-Heat the oil over medium heat in a large frying pan or wok.
-Add onion, cumin, ginger, garlic, red pepper. 
-Stir and fry until the onions are golden brown-8-10 minutes.
-Add tomato paste and diced green chile.
-Add the cauliflower, reduce the heat to low, cover the pan and cook for 6-8 minutes. 
-Add potatoes, Turmeric, Garam masala, salt and pepper 
-Stir gently until all the ingredients are mixed thoroughly. 
-Cover the pan and cook til the potatoes are heated through-6-8 minutes. 
-Turn off heat and garnish with fresh cilantro leaves.

Enjoy.

			<title><![CDATA[Chicken Noodle Soup - yeah, the best you'll ever have.]]></title>

			<description><![CDATA[This is by far the best soup ever!  Enjoy!!!  I can't figure out how to make my pictures big like OTYA's *stomps feet :mad:* but you can click on them.

I make my own egg noodles, but I have also used the frozen egg noodles.

Measurements are approx.

2 1/2 cups of flour
2 eggs
1/2 cup milk
pinch of salt

Combine all ingredients and knead until dough is not sticky, cover and let sit for 10 minutes.  I have the pasta attachment for my KitchenAid, but if you are doing by hand, roll out until desired thickness and cut with a pizza cutter.

Chicken Soup

Whole chicken (insides removed)
Chicken base
Onion
Carrots
Celery
Canned sweet corn
Noodles

Put a whole chicken in a stockpot of water with salt (I use kosher flake) and olive oil.  Boil until chicken is thoroughly cooked.

Remove chicken from water.  Continue to let the water boil and add 2 big spoon fulls of chicken base to the water (do not use bouillon or store bought broth).

Cut of veggies.  I use half a onion, celery, carrots and a can of corn.  Add veggies to pot with stock water and chicken base and boil until veggies are tender.

While veggies are boiling, debone chicken.  Pull as much meat as possible and add to pot.  Add cracked pepper.

Once veggies are tender, add noodles.  If you are using fresh ones, you only have to boil for 3-5 more minutes.

Broccoli Cheese Soup

2 cups sliced carrots
1 cup sliced celery
2 cups broccoli florets
1 1/2 cups chopped onion
1/2 cup butter
3/4 cup flour
1 can condensed chicken broth, undiluted
1 qt milk
1/2 pound cubed Velveeta

In large saucpage, bring 2 qts water to a boil.  Add carrots, celery and broccoli; cover and boil for 5 minutes.

In another large saucepan, saute onion in butter.  Add flour and stir to make smooth paste.  Gradually add chicken broth and milk.  Cook until mixture thickens, about 10 minutes.

Add the carrots, celery and broccoli; head through.  Add cheese; heat until melted and veggies tender.]]></description>

			<title>BBQ Chicken Pitas</title>

These are also slightly complicated as they require a couple of different prepared foods to be made.

I make BBQ chicken legs, and cut the meat off the bone, and for the garnish I make a Northern Indian type salad. You don't have to make the salad for your garnish, but it tastes amazing with it. 

For chicken:

Skinned chicken legs
Salt
Pepper
Garlic Powder
Your favorite BBQ Sauce
White flour pitas...i use old world...they taste amazing and are 100 cals each.

Procedure:

Skin chicken legs and set in a container. Sprinkly liberally with spices and set aside. It should look like this:

Northern Indian Salad

You'll need:

Half a cucumber skinned
Whole white onion
Whole vine ripened tomato
1 cup of cilantro
1 Lime
Salt
Pepper
Vinegar
Rock Salt
Chaat Masala - a spice that can be bought at *any* east indian grocery

Procedure:

Cut cucumber into thin slivers. Cut onions into slivers as well. Cut thin slices of tomato. Chop cilantro into fine pieces. 
Add onions to bottom of a container. Sprinkle with all listed spices. Add cucumbers on top, sprinkle with all spices. Add tomatoes on top of cucumbers, sprinkle with all spices. Add cilantro. Squeeze the juice from the lime on top. Add about 3/4 cup of vinegar. Cover and shake vigorously. Set in freezer for 15 mins. Take it out and shake it...add more spices if needed. I usually add more salt. Put back in freezer for another 15 mins. Take it out and shake....it should be done....then set aside in fridge. It should look like this:

Grill your chicken legs. When chicken is done coooking after about 15-20 mins, put in a container or aluminum foil and add barbecue sauce. Let sit for about 5 minutes in foil or sealed container. It will continue to cook and reabsorb some moisture.

Heat your pita until soft. Cut chicken off the bone. Combine chicken, salad and whatever garnish you would like to pita. I use a bit of miracle whip or ranch dressing, add the chicken, then the salad, then lettuce and cheddar cheese then mustard. You are free to garnish as you please.

			<description><![CDATA[Garlic Green Beans

What you'll need:

Fresh cut green beans washed and dried thoroughly with the ends cut
Table Salt - normally i'd use sea salt, but the smaller the grain the more the salt will stick to the beans
Black Pepper - same thing here...the finer the pepper the better. Freshly ground doesn't work well.
Garlic Powder
Fresh Minced Garlic
Olive Oil

Procedure:

Make sure beans are completely dry. Toss green beans in pan with olive oil on low heat until coated. Add all spices to taste. Top with freshly minced garlic. Fry until desired consistency. Make sure you add oil before the spices so the spices adhere to the green beans evenly.
These go well with chicken/pork/beef/salmon....pretty much any meat.

Rosemary Potatoes

You'll need-
Red potatoes or any potatoes with a thin skin. Diced into dice size bits.
Salt
Pepper
Cumin
Red Pepper - optional but good for a slight kick
Freshly chopped rosemary
Olive oil

Procedure:
Add olive oil to a mixing bowl. Add in diced potatoes. Mix until potatoes are covered evenly in oil. Add in spices and mix thoroughly again. Dump contents into a baking dish and bake on 350 for 35- 40 mins or until desired consistency is reached. I like mine on the softer side. You may also turn potatoes halfway through the cooking time but it isn't required. These go well with pork especially, lamb and chicken.

			<description><![CDATA[OK.  So I'm on this kick of learning how to cook.  I'm also trying to do it healthy to lose weight and get in shape.  I've never had a "great" body, but I want one.  

So, I asked my mom how to make egg salad.  Come to find out, chicken salad is made the same way.  Who'da thunk it?  Anyways...

This will make two servings.

Four eggs
Mashed Garlic (McCormick's is good)
White and Green Onion powder with parsley
Light Miracle Whip
Half a stalk of celery
[LIST]Hard boil four eggs for three minutes.  Take off heat and let stand one hour.
Peel eggs and mash in a bowl to the consistency you like.
Pour enough Light Miracle Whip (or mayonnaise) over the mashed eggs.  Mix together.
1/2 teaspoon mashed garlic (I used an actual teaspoon so my measurement may be off if you're using the scoop)
Onion Powder to preference.
Cut up celery and place in mixture
Mix together again

The garlic and miracle whip will make this pop!  The celery will add a beautiful sweetness to it!  If you want to make a sandwich with it, I highly suggest 100% Whole Grain Wheat Bread (toasted).  By making it a sandwich you can make it last longer.

Thinly sliced veal cutlets
Bread crumbs
All purpose flour
2 eggs
Salt
Pepper
Garlic Powder
Shredded Parmesan Reggiano
Olive Oil

Procedure:

Combine bread crumbs, salt, pepper, garlic powder and parmesan cheese and mix thorougly. Set aside. Pour flour onto a dish. Set aside. Beat two eggs in a bowl- add salt and pepper to taste. Set aside. 

Roll the cutlets in flour coating both sides. 
Bathe in egg mixture on both sides.
Roll in mixture of bread crumbs, salt, pepper, garlic powder and Parmesan cheese.
Fry on medium to low heat in olive oil coated pan. 4 mins a side.  

Shown served with linguine alfredo.

1/4 cup corn syrup
1/4 cup milk
 
Mix together in a heavy sauce pan. Cook over med high heat, stirring often, to hard ball stage (250 degrees f). Remove from heat and stir in 2 tablespoons butter. Stir for 2 or 3 mins to cool a bit.
 
To do apples, you need to put them on a stick or skewer, coat with caramel either by dipping or spooning over apple. Keep the cooking pan in a hot water bath so it stays workable. Keep turning apple on stick until caramel firms up a little. Place on well buttered wax paper or a pile of crushed nuts, to cool.</description>

Serve how you want i.e. with mashed potatoes or as sandwiches with provolone is good too.</description>
