1. Ride 5 times a week. (even if the two extra days are only 20 mintues)
2. Do intervals of faster speed and higher resistance.
3. Add an extra 15 minutes to your 40 minute ride of sit ups, pushups, jumping jacks and jogging in place (high knees)
4. Cut your calories back by 200 calories a day.
With the added exercise and a little better eating, and less calories you should be able to lose some weight. If you are doing 30 mins/3x a week and you're not gaining, then you are doing the minimum that your body needs to maintain your current weight. So you'll need to burn more calories and/or take in less calories. By adding time, making it harder and eating a little less you should be able to lose 7 pounds in a couple of months.
