You want to start with the most common culprits. If you want a quick interesting read on this subject see if you can find a copy of, If You Love Me Don't Feed Me Junk by M Gooch.

Unless you are 100% caucasion there is a high probablilty that you can't digest dairy. Wheat, actually glutten is another high sensitivity item. As is corn.
When I get overexposed to dairy, I get crampy and diahrea and in some case it's almost like I'm drunk, I've even halucinated from it. Food sensitivities can go way beyond digestive problems.

I am always tired it seems, plus I get headaches like every day. Also, my hair has been thinning. I kind of have this suspicion that whatever is going on with my digestion is causing those other issues. Lately, I've been having hard stools, too. That's a new one. It's really difficult to go to the bathroom, but I have to, because the pain is unbearable. It's a vicious cycle.

Have you ever seen a naturopath? You just might want to do so. Completely different approach. I've literally had two of them save my health and at least once, my life. For the most part Allopathic doctors are trained to look at one part of the body. But nothing in the body acts independently, it all works together. And throwing drugs into your body rarely does more than mask the real problem source.
Give a naturopath a try.

My husband and I are starting to suspect a gluten allergy. Anyone else allergic to gluten here? If so, what are your symptoms if you eat something with gluten?

you should read about IBS. and food sensitivity. you MIGHT want to get that colonscopy done.. it's the only way you can rule out other things like crohns. but you should look lup ibs and crohns. there's different types of ibs.

also, do you get hives? or rashes,... if you are allergic to a type of food it could be a delayed reaction which is causing your cramps. but you said you have to go to the bathroom almost immediately after eating, that's a sign of instant food reactions. you should talk to your doctor about.....

IBS
CROHNS
instant allergic reactions
delayed allergic reactions

and see what he/she says.

I do not get hives or rashes. Yesterday I ate a peanut butter sandwhich, a piece of string cheese, and I was fine for hours. Then, we ate cheese raviolli with a side of alfredo pasta for dinner and my stomach was very irritated after that. So we are thinking something in that dinner really upset my stomach.
