I play paintball and take horseback riding lessons (not at the same time, obviously :P)! Also photography... of people playing paintball and of WW2 airplanes at airshows!

I don't know if this qualifies as unique or not, but I play the organ--not a whole lot of people do. I took piano lessons from an early age and when I was about 15 my teacher asked if I would like to try organ, and I said OK. I've been playing for about 7 years now. I have an old console organ in my apartment that I love playing. One big advantage to organ over piano in an apartment is that an organ can play _very_softly so it doesn't ignore the neighbors, so I can pretty much rock it whenever I want; :-)
