Most likely we are going to fly out of SDF. Although We have considered BNA as well. My only thought is that if I go too far from home, most likely when we return, I am not going to feel like carting myself back several hours. We will also probably try to get someone to take us to the airport to avoid parking fees since we plan to be gone at least 10 days.

I recommend just getting the tickets yourself. Travel agents charge a fee (or up the price) and don't provide much value. United is probably the best bet, but you can just go to travelocity or other online source.
You can make hotel reservations by web. No need for an agent. Try online tripadvisor for reviews from people who have stayed various places.
If you give me an idea of what you want to see and some clue as to budget (Hyatt Extravaganza Royal or youth hostel), I can give some suggestions.
That's okay, that makes two of us. Do you know if there is anything i need to know about traveling amongst countries?? We discussed maybe going to France or Spain while we are there. I know we'll probably plan way too much for the time we're there but ideally we hope to be gone 14 days.
Is the jetlag terrible? I've never been on that long of a flight so not really sure what to anticipate.
I'd like to stay somewhere more "traditional" and not any chain type hotels, but is there a good way to find those little places that are also rebuttable? I noticed a few but their sites are obviously in Italian.
We had discussed flying into Florence, but it looks like we connect in Rome, so part of me wonders if we shouldn't just fly into Rome and then take a train to Florence for a couple days.

Traveling between countries in europe is easy. You will have your passport - but they almost never ask. Trains work well - the trains north from Italy through switzerland are very scenic.
OTOH, don't try to do too much. 14 days is fine for Italy. Maybe add one other city, but probably not worth the travel time.
Jetlag feels like you have gone a night without sleep. Over the next few days you will feel tired and awake at the wrong times. Best advice is to lie in bed (asleep or not) during local sleeping hours, be up during normal daytime hours (set an alarm!!!), and eat at normal meal times.
Traditional hotels can be nice - but are a lot harder to deal with (less likely to speak English, non-working web-site, more chance of getting a really terrible place). The standard chain hotels provide a nice place to retreat to when the strangeness of a new country gets to be too much. Try tripadvisor to look for nice small hotels.
Flying into Rome is better than Florence. the Florence airport is tiny - flights often delayed.
If it were me, I'd fly to Rome. Stay a few days. Train Florence, stay a few days, Train to Venice, stay a few days.
If you want outdoor (not city) stuff, from Venice you can take the train to Verona, then rent a car to go to the Italian Dolomites. (there is probably bus service as well). They are fantastic mountains.
Florence has the best Gelato (ice cream) in the world. Its very good in Rome as well: try the place on the Piazza Navona.
Don't even think about driving inside Rome or Florence.

Venice was nice, but I think overrated. It's awesome to go once, but I wouldn't go back anytime soon.
The rest I loved. Eat local restaurants, you will find the best food in those.

Venice is nice if you like old things. Its especially nice in winter when it isn't crowded and you can walk around little lanes and canals that haven't changed in 500 years. The hotel I stayed in last time was almost 700 years old (!). Unlike a lot of cities, it doesn't just have some old buildings, almost the entire thing is ancient.
