I know when you are pregnant, you count your due date from the date of your last period. Is it possible to conceive, have a period shortly after (maybe a few days to a week or two), and still be pregnant? Would you have to wait for period #2 to officially say you're not pregnant? How exactly does that work?

It is possible after pregnancy occurs. Was it a normal period? if it was earlier than usual and if it didn't really feel like a 'period' i.e. with all the signs and symptoms that usually go with it, then it could very well be an implantation bleed i.e. when the fertilised egg implants into the endometrium. In this case you still count the pregnancy from the date of your last real 'period.'

    does this make sense?

it makes sense, yes. that example was assuming that the period was normal time and length. (i'm not pregnant- just wondering)
