Default Veggie heads!!!! :)

ive been a vegetarian for a few years now. i dont think im getting all the nutrition i need though. i know i can get protein from like peanut butter, and believe me , i LOVE peanut butter!

ive read some things on the kinds of foods vegetarians need and how to go about getting them, but it was really confusing. i cant remember all the details but it was like combining this thing with this thing at certain times, and i have no clue what they were talking about.

i mean i used to eat pretty well, but not so good anymore. im not overweight at all. luckily i have a great metabolism. but i just want ot eat better and feel healthier. any tips on what foods that are easy, and cheap since im still in high school so my rents are buying the food??

i know the greener the vegetable is, the more nutritional value it has. and if there are any other veggie heads out there like me, maybe share some simple recipes?? i like simple. not overcomplicated lol

im not looking to lose weight, just better my diet

One thing good for protein is Tofu, you can buy the firm kind and put it in your salads, in your soup, you can make tofu burgers and all sorts of things with it. You definitely need your protein tho. Your liver needs it as well as other parts of your body.

I've got a lot of recipes for Veggie head food, tofu burger being one of them let me know if you would like any of them!

Sure, nuts are protein, mushrooms they say is the same as eating meat, greens are definitely good for you, as well as red berries, antioxidants.

Potatoes are most people's favourite but hold starch and you need to fry, or add butter hey? haha..

I like cannelloni, with spinach and cottage cheese, and tomato puree off course underneath and over the top whilst it bakes, and a bit of mozzarella.

But I think you said you were lactose in-tollerant.. I am too but I can still eat that...even a few pine nuts chucked on top towards the end so they roast, can make a nice dish...

Haven't eaten meat in five years (I didn't grow up around vegetarians, my choice was just a quick one that I've stuck with) and I don't ever care to go back. The problem with being vegan for so long is that you WILL start eating less healthy as you learn that there are some reaaaaally tasty snacks that are inadvertently vegan, but we all have cravings so satisfy. Now, my girlfriend isn't even anything near a vegetarian, but it doesn't matter to me and it confuses her lol, but I don't judge people if they like to eat other animals... we evolved with teeth for ripping them up as well. Thankfully, there is vegan jerky!

If you google vegan mozarella cheese, you'll find a recipe to make it without dairy. I'll make it to top spaghetti sometimes. Other times I'll just top it with Nutritional Yeast Flakes.

You can easily get your B vitamins through fortified cereals if you don't like Nutritional Yeast Flakes.

Make friends with nuts. Also, sprouts are excellent forms of protein. You can get a cheap sprouter on eBay; don't bother with the electric ones. I have the one made of bins that stack on top of each other. You pour water on top and it filters through all the other bins into the bottom ... repeat 2-3 times per day and grow your own sprouts. It's cheaper and healthier than buying them.

Alfalfa is my favorite. One tablespoon of seeds will grow a crop that can last a week. I normally end up growing more than I can eat. If you google sprouts, you'll find plenty of websites that break them up into nutritional information and how they taste.
