I love meat, but I went on a lack-of-money-induced veggie diet back in January.
Hummus was my favourite form of protein, as well as edamame. I tried to make my own hummus, but it didn't really work out. Chickpeas are the devil.
I got by without any kind of meat supplement, since of course I was cutting out meat because I was poor and meat supplements are super-high. I didn't do any kind of "special" vegetarian foods either, just the basics.
Mexican food is really adaptable to vegetarianism. You can get canned refried beans (or make your own,) just make sure that it says fat-free or something like it, since they're traditionally made with lard. Tortillas are insanely easy to make from scratch, and I would think they would make a good way to hide away nutrients. I've never tried spirinella, but I would imagine if it's mixed with corn flour, it would probably get masked pretty well. You can make salsas from raw tomato, onion, and cilantro, which is a good way to get all the nutrients they can impart before cooking. Guacamole is great too, and a good way to get non-dairy fat in. (Can you tell I've been living on mexican food lately? Hehe, just not the vegetarian variety.)
Lots of people do vegetarianism wrong, or do it too expensive. Find your balance!
