Gluten Free Diet when travelling in the US?

G'day, hope to get some sound advice on how to manage my coeliac (or celiac) diet whilst travelling down Route66 . i am quite worried about it, went to Hawaii last year and was in dire straights, no one really seemed to understand the requirements and didn't appear to be willing to listen.
i would really appreciate any hints on where to shop, what to look out for, what restaurants might be suitable.
