    LoL finding good authentic mashed potatoes is a treat. considering I grew up in CA where there are hardly any good comfort food.

    oh! and you can't forget BACON on a potato...EVER! lol.

    Some of these ideas sound delicious!!

    One I've learned recently from a small family-owned local restaurant, is Acadian Fries.

    They're easy enough:
    First you bake the potatoes, preferably in the oven wrapped in tinfoil, but you could also do it in the microwave if you're short on time. Once the potatoes are well-baked, you cut them up into slices, about half a centimeter thick (or thicker, if you prefer) and give them a quick pan-fry in a bit of butter or canola oil. When they're a lovely golden brown, sprinkle with a little salt and pepper! Delicious!
