Default Spicy Homemade Macaroni and Cheese

No its not healthy for you at all, and its time consuming, but its well worth it.
I had spicy Mac and Cheese at a restaurant a while back and I went to work recreating it. This one is REALLY spicy...if you want to take some of the heat off, use mild jalapenos, not the hot ones.

T’s Spicy Macaroni and Cheese

Ingredients:

For Pasta:

2 cups elbow pasta, boiled with pinch of salt for 8 minutes.

16 ounces Cheddar cheese, 1/2 cubed, 1/2 shredded

8 ounces pepper jack cheese, diced or cubed

For Base:

1 large clove of garlic minced

1 small can of diced hot jalapenos

½ finely minced white onion

2 teaspoons flour

½ tsp salt

½ tsp turmeric

½ tsp cumin

1 teaspoon freshly ground black pepper

1/2 teaspoon dry ground mustard

6 tablespoons sour cream

1 large egg, beaten

1 cup heavy cream

1 cup half-and-half

Procedure:

Preheat oven to 350 degrees F.

In a large bowl, toss together pasta with the cheese cubes and pour into the baking dish. In a large bowl mix together the onions, garlic, jalapenos, flour, turmeric, cumin, salt, black pepper, dry mustard, and sour cream, egg, heavy cream and half-and-half. Pour over the pasta and mix thoroughly. Cover with shredded Cheddar cheese. Bake uncovered until top is just beginning to brown, about 25 minutes. You may add bread crumbs at this point and bake another 5 minutes till they are crispy.
