OTYA is right, lower heat. Put the pan on the burner and preheat it before you add the olive oil or butter. If the oil or butter smokes the temp is too high. Try a splash of tobasco sauce in with the eggs instead of salt. For scrambled eggs I use a fork to whip them up and often use water rather than dairy. For an omlet I use a flat whip and mix them much more throughly with milk. Omlets cook undisturbed in a covered pan until you are ready to add the filling a fold it.
