Here's an all veg recipe for you guys.
The dish is properly called Aloo Gobi. (ah-loo go-bee)
It's basically potatoes and cauliflower prepared fried in a wok. It goes very well with yogurt and some type of bread.
Here is the way I prepare it.
You need:
1 medium sized cauliflower
1 medium onion diced
Olive Oil
Salt to taste
Pepper to taste
1/4 cup of tomato paste
1 inch Diced Ginger
3 Cloves Diced Garlic
Cumin - 1 teaspoon
Turmeric - 3/4 teaspoon
Garam Masala 1/2 teaspoon- You can get this at any asian market
Cayenne Red Pepper to taste- Use sparingly!
1 fresh green chile chopped
Fresh Cilantro chopped
Procedure:
-Boil the potatoes in their skins and allow to cool. Cut into about 1.5-2 inch squares. It is important that they are all around the same size to ensure uniform cooking.
-Soak cauliflower in boiling water for 2 minutes....just two...if it is overcooked it will become too soft.
-Cut cauliflower into 2.5-3 inch pieces.
-Heat the oil over medium heat in a large frying pan or wok.
-Add onion, cumin, ginger, garlic, red pepper.
-Stir and fry until the onions are golden brown-8-10 minutes.
-Add tomato paste and diced green chile.
-Add the cauliflower, reduce the heat to low, cover the pan and cook for 6-8 minutes.
-Add potatoes, Turmeric, Garam masala, salt and pepper
-Stir gently until all the ingredients are mixed thoroughly.
-Cover the pan and cook til the potatoes are heated through-6-8 minutes.
-Turn off heat and garnish with fresh cilantro leaves.
Enjoy.
