I didn't see a good current thread to add this to but for those of you looking for quick easy recipes for snacks or small meals look these up. The simplest is take a flour tortilla or any soft taco shell, cover in your favorite shredded cheeses, and bake at 350-400F in the oven until the cheese melts and the edges crisp. However any ingredient that can go on a pizza can go on these and if you are creative or go hunting online for recipes it can get infinitely complicated. You can use sauce but there is no edge to the crust so you can't put things on too thick. They cook best in a round layer cake pan the same size as the shell to keep the ingredients in place but you still have to keep in mind eating it. With the sauceless versions you can just cut or pull them in half and eat with no mess.
They also cook in skillets or microwaves but the microwave version is not crispy and anything I can toss in the oven and forget for so many minutes is a plus. I have no cooking skills to speak of and get too impatient to cook things properly with a skillet. I'm mostly banned from kitchens.
My mom started making them for my sister who is a cheese fanatic. Then we made them all the time as teenagers for snacks and I used them as quick meals before classes a few times when I first started college. If we had any cooked plain ground beef leftover I'd make one with some of the beef and sliced mushrooms.
