    Talking Chocolate Mint Cookies-Tastes like Thin Mints

    Chocolate Mint Cookies

    Time: 20 Minutes To Prepare, 12-15 to Bake
    Yields 2 ½ Dozen

    Ingredients

    ¾ Cup of Butter (1½ Sticks)
    ½ Cup Packed Brown Sugar
    ½ Cup Granulated Sugar
    1 Egg
    1 Tsp. Vanilla Extract
    1 Tsp. Peppermint Extract
    1½ Cups Unbleached White Flour
    ¼ Cup Unsweetend Cocoa
    1 Tsp. Baking Soda
    ¼ Tsp. Salt
    1 Cup Chocolate Chips

    1. Preheat the oven to 350º F and lightly grease one or two cookie sheets

    2. Cream together butter and sugars with an electric mixer at high speed

    3. Beat in the eggs. Stir in the vanilla and peppermint extracts

    4. Sift together the dry ingredients, and then add that to the butter mixture along with the chocolate chips. Stir until well combined

    5. Drop by rounded teaspoons onto a lightly greased cookie sheet

    6. Bake 12-15 minutes at 350º F

    7. Remove from the sheet immediately after baking and cool them on a rack

    Just like Thin Mint, these cookies tastes better after being chilled in the freezer! At least that's how I eat thin mints haha

    Thin Mints are the devil (), i could sit and eat them all night..
    I dont think i've ever tried them with chocolate chips though,

    Nice addition..!

    Tried it and loved them!

    Only I had to bake for 9-10 minutes, the first dozen I baked for 12 minutes, and wasn't watching them.. they got a little too crispy on the bottom. But bake times depend on the oven, so my only advice would be to watch them the first time to figure out what works best.

    I'm so happy someone is actually trying them, because they are SO GOOOD! I like to freeze them, crush them up and sprinkle them on top of ice cream =P

    I can't know you Beckers.... we're done.... these cookies are going to be the death of me.

    Seriously, I can't wait to make them this weekend, and I'm totally going to freeze them! I LOVE THIN MINTS! But nothing is better than something home cooked!

    I bought the ingredients for them today. I plan on making them on Saturday for hubby's friends for the UFC fight. I hoping they will be a hit! They sound sinful.

    The first batch came out about 10 minutes ago. Not only does my house smell like a gigantic girl scout thin mint box, but the cookies are DELICIOUS!

    When my picky as ever 9 year old, who hates Thin Mints by the way, LOVES them, I know they gotta be good.

    Hubby and company will be trying them shortly.
