So we go tent camping multiple times over the spring/summer/fall... and all we have is a cooler to keep our food cold, and a campfire or a propane powered coleman stove to cook over.

We do the usual camping food - smores, pudgy pies, beans, potatoes, brats and burgers... we've baked a frozen pizza over the campfire which went well, but I would like to try something different!

Does anyone have a tasty dishthat they make when they're out in the great outdoors with no real equipment to use for cooking? I'm looking for a bit more variety than the same old, and thought some fellow campers here might have some great ideas for some new camping recipies for me to try this season!

Thanks! And happy camping to you all

You can cook darned near anything, got a dutch oven? Look them up. We used to live in a tent about 3 months out of the year - literally. My mom would bake corn bread and even cakes using a dutch oven. You may have to bit of experimenting to get the hang of it but get some good coals going in the fire, dig a pit (or make the fire in the pit and burn it down to coals, place your dutch oven in it and cover the pit.

At home, cut up meat and veggies for shisk kabob, add your seasonings and olive oil, put it all in a heavy ziplock and freeze. Pack in your cooler, initially it acts as ice. When you pull it out, thaw a bit and make kababs. They great the flavors get really well blended. You can also do this with chicken and other meats in marinade.

I never even thought of using a dutch over over the camp fire! That's a great idea! When your mom made the cornbread or cakes, did she have to alter her recipes at all (increase/decrease any ingredients)?

The shikabobs sound yummy too! I like the idea of making them ahead of time so you just have to pull them out, thaw and cook.. no messing around with the ingredients at the camp site then

The recipes stay the same. You bake over a fire, that has to be over coals in a pit to hold the heat. But a dutch oven is great for stews and things like that too.

Wrap potaoes in foil and place them in the coals around the edges of the fire. Get corn on the cob, don't shuck it, just pull back the outer leaves to get the silk out, pull the leaves back up, soak them in water and them place in the coals to cook. (do shake off the excess water first)

A dutch oven is a must! We've also picked up an awesome dutch oven cookbook.

Another thing we do is hobos. Cut up meat or use a steak, veggies, garlic, spices, wrap it all up in a layer of tin foil (well actually 2-4 layers) and put it in your campfire coals, nice white hot ones. These are very yummy!

I'll think of some more too.

Another big hit out camping is spaghetti. You can make the sauce before you leave and freeze it. Then when you are out camping, boil some water, toss in the noodles and put the sauce in another pan to cook and simmer (thaw). Add a salad and some rolls.

Another thing I do that everyone seems to love for breakfast. Take the canned biscuits (not the grands, they are too big), but cut the biscuits in half and use your hands to thin them out a little. Heat up some oil in a skillet (not a lot, a little less than 1/4 inch). Put the biscuits in the pan, they rise and brown up really nice, flip them so both sides are a golden brown. Everyone loves them with honey, cinnamon and sugar, etc.

Dutch ovens rock. You can make anything in them and there are load of recipe books for them.
My favorite is hobo stew. Put potatoes, carrots, onions, spices, butter, etc in foil to make little pouches and then just toss them on the hot coals. I like that you can make them all up beforehand and just throw them in the fire.

Do you fish while you're camping? You can toss a whole fish in tinfoil in there as well.

I've been googling dutch oven camping recipes all afternoon and I found one similar to the hobo stew!

we aren't close to any water with fish in it... but its still a good idea for if we ever do go camping in an area where fishing is possible! (Although that would mean I'd have to be successful at fishing for once lol)
