    Default Fruity Peanut Protein Bars

    No one has posted recipes in a while, so thought I'd post some.

    1/2 cup plain protein powder
    1/4 cup oat bran
    1/2 cup whole-wheat flour
    2 TB wheat germ
    1/4 tsp kosher salt
    1/4 cup unsweetened dried cherries
    1/4 cup unsweetened dried cranberries
    1/4 cup unsweetened dried blueberries
    1/4 cup unsweetened dried apricots
    3/4 cup silken tofu
    1/4 cup apple juice
    1/4 cup brown sugar (recipe calls for Splenda, but I use the sugar in the raw stuff)
    1/4 cup liquid egg substitute
    1/3 cup reduced-fat peanut butter

    Preheat over to 350, like bottom of 13x9 baking dish with parchment and lightly spray.

    Mix together protein powder, oat bran, flour, wheat germ, and salt. Set aside.

    Coursely chop cherries, cranberries, blueberries, and apricots, place in bowl and set aside.

    In another bowl, whisk tofu until smooth. Add apple juice, brown sugar, egg substitute and peanut butter, whisking after every addition. Add to protein powder mixture and stir well to combine. Fold in dried fruit.

    Spread evenly in baking dish and bake for approx 35 minute, until bars are firm.

    Remove from oven and cool before cutting. You can get about 16 squares from it. Store at room temp for about a week in air tight container.

    Each bar has: 97 calories, 14 g carb, 4 g sugar, 6 g protein, 2 g fat, and 2 g fiber.

    Do you know if this can be made into a crumble type granola..? Or, Might you have a super granola recipe you care to share..?

    You know, I'm not sure. Haven't tried it like that.

    I have another recipe for Granola Bars that may be more suited for that. I'll dig it out and post it.

    I've got some other granola recipes too.

    Oh my god that sounds so good! I'm going to make these as soon as I get back from my tournament and I can eat again.

    Olympia, I have the best granola recipe, I'll dig it up....

    My younger son and i Love granola, we add it to our yogurt too!
    I have a great recipe for Peppermint patties. They are not for the
    weight minded.. But they are delicious!

    (Like, York) Peppermint Patties serves/makes 20 patties

    Ingredients:
    1 Egg white
    4 cups powdered sugar
    1/3 cup light corn syrup
    1/2 teaspoon Peppermint oil or extract
    Cornstarch for dusting
    1 (16-oz.) bag dark or semi-sweet chocolate chips
    (I use the Dark Chocolate)

    Directions:

    In a medium bow, beat the egg white until it is stiff and forms peaks. Don't use a plastic bowl for this.

    Slowly add the powdered sugar while blending with an electric mixer set on medium speed.

    Add the corn syrup and peppermint oil or extract and knead the mixture with your hands until it has the smooth consistency of dough.

    Using a flat surface and a rolling pin lightly dusted with cornstarch, roll out the peppermint dough 1/4-inch thick.

    Punch out circles of peppermint dough with a biscuit cutter or a clean can with a diameter of about 2 1/2- inches. Place them on plates or cookie sheets, and let them firm up in the refrigerator, about 45 minutes.

    Melt the chocolate chips in a microwave set on high for 2 minutes. Stir halfway through the heating time. Melt thoroughly, but do not overheat. Melting the chocolate chips can also be done using a double-boiler over low heat.

    Drop each patty into the chocolate and coat completely. Using 2 forks, one in each hand, lift the coated patty from the chocolate. Gently tap the forks against the bowl to knock of the excess chocolate and place each patty on waxed paper.

    Chill the peppermint patties until firm, about 30 minutes.

    I didn't mean to hijack your thread, LB..
    Had a craving for these last week and made them.
    Just thought to share..
    I have one every other day. They store well in the freezer, and
    will last as long as it takes to consume.. (up to 2 months)

    Thought i would make your protein bars later this week. Just made SP and WC's Granola..
    Both my son and i are eager to try yours. He wants to take them to school as he commutes and has little time
    in between classes.

    Lana...
    I made your granola bars this evening... I had a friend over and we were busy in the kitchen.
    Had a ton of tomatoes and fresh basil to make sauce with and then.. had all the ingredients for your bars..
    They turned out perfectly delicious!! Thank you..
