These are a really good alternative to the processed granola bars that are out there - healthier ingredients, no refined sugars, and high in the GOOD fat. Because of the seeds and nuts in these bars, they will be higher in calories and fat, but like I mentioned, it is good fat.. a 2x2 inch bar is a serving size for these:
Homemade Granola Bars
2 cups Sesame seeds
1 cup raw almonds
1 cup raw peanuts
½ cup raw cashews
½ cup raw sunflower seeds
½ cup flax seed
0 to 1 tsp salt, depending on if any of the above are salted
2 tsp of cinnamon
½ cup & 2 Tbs honey
Mix flax, sesame seeds, cinnamon, salt, and honey in a large bowl. Dump all the nuts in a food processor and chop to the desired coarseness. Add chopped nuts to the seed and honey mixture and stir well until well mixed. Lightly coat a 9x13" baking pan with olive oil - I use a spray. Spread mixture in pan and press down lightly. Mixture is very sticky.
Bake at 300 degrees for 20-25 minutes. Cut in pan while still warm and let cool in pan. Bars will keep for a week or more in the refrigerator if you wrap them individually in plastic.
