Fall is in full swing - and those yummy, hearty chilis and stews are getting harder to resist. Here are 3 recipes I have for crockpot stews/chili that are very good, and also won't kill you on the calories/fat that is oh-so-common in heart crockpot meals!
Low-Fat Chicken Chili
INGREDIENTS:
3 Medium Carrots
1 Medium Red Pepper, Chopped into 3/4 Inch PIeces
1 Pound Boneless, Skinless Chicken Thighs, Trimmed of Fat and cut in Half
115 Ounce Can No Salt Added Corn, drained
115 Ounce Can Reduced Sodium Kidney Beans, drained and rinsed
116 Ounce Jar Low Sodium Organic Salsa
DIRECTIONS:
Place carrots and peppers at bottom of 4 quart Crockpot followed by chicken thigh pieces. Add corn, kidney beans and salsa. Cook on low for 6-8 hours.
Three Bean Crockpot Chili
INGREDIENTS:
1 Large Onion, chopped
2 Large Carrots, diced
Ύ Pound Extra Lean Ground Beef
1 Tablespoon Chili Powder
2 Teaspoons Cumin Powder
115 Ounce Can Reduced Sodium Kidney Beans, drained and rinsed
115 Ounce Can Black Beans, drained and rinsed
115 Ounce Can Reduced Sodium Pinto Beans, drained and rinsed
14 Ounce Can Diced Jalapeno Peppers, drained
128 Ounce Can Crushed Tomatoes
DIRECTIONS:
Coat the inside of a 4-5 quart Crockpot with nonstick cooking spray. Place chopped onions and carrots at the bottom of the Crockpot. Brown ground beef in a skillet sprayed with nonstick cooking spray. Sprinkle chili powder and cumin into skillet. Remove spiced ground beef with slotted spoon and place on top of vegetables in Crockpot. Add kidney beans, black beans, and pinto beans, jalapeno peppers and crushed tomatoes. Cook on low for 6-8 hours.
Pork and Sweet Potato Stew
INGREDIENTS:
1 Medium Sweet Potato, peeled and cut into chunks
1 Large Onion, chopped
2 Stalks Celery
1 Large Granny Smith Apple, cut into chunks
1 Large Carrot, sliced
1 Pound Pork Tenderloin, trimmed of fat and cut into chunks
½ Cut Apple Cider
Ύ Cup Fat Free, Low Sodium Chicken Broth
½ Teaspoon Rosemary
½ Teaspoon Sage
Freshly Ground Black Pepper
DIRECTIONS:
Spray the inside of a 3-4 quart slow cooker with nonstick cooking spray. Lay vegetables on the bottom of the Crockpot, followed by the pork. Pour apple cider and chicken broth over the pork and vegetables and add herbs. Cover and cook on low for 7-9 hours. To thicken the juices, make a cornstarch slurry from Ό cup cornstarch and a Ό cup water, and stir into the stew about a half an hour before serving.
