MEATLESS LETTUCE TACOS
Things You'll Need:
• 2 Cups of walnuts, soaked
• 1/3 cup of Wheat-free tamari soy sauce
• 1 bunch of cilantro
• 1 Tbsp. cumin powder
• 1 Tbsp. coriander powder
• 1 head of Romaine lettuce
• 3 sliced tomatoes
• 3 sliced avacados
• Sea Salt to taste
• food processor
Step 1
During the afternoon the day before soak the walnuts in purified water.
Step 2
put the soaked walnuts, wheat-free tamari soy sauce, cilantro, cumin powder, coriander powder in the food processor and process the ingredients.
Step 3
Stop the food processor and scrape the ingredients off the side of the processor and continue processing until the ingredients look like ground taco meat.
Step 4
Remove the ingredients and set them aside
Step 5
Wash the lettuce and choose the leaves for the taco wraps
Step 6
Prepare the avocados and tomatoes
Step 7
Fill the lettuce with the taco "meat" and top with toppings
Step 8 serve on a salad plate and season with Celtic sea salt and your favorite Mexican seasoning. There should be 8 servings

Lettuce wrapped meat tacos
Ingredients:
• 6 oz lean ground turkey raw (around 4 oz cooked)
• about 1 tsp of my taco seasoning
• 4 large inner leaves of romaine lettuce
• 4-5 strips of green bell pepper chopped
• 1/4 of a tomato chopped
• 1 oz Fancy Mexican shredded cheese
• about 2 tbsp salsa
Brown the turkey with the seasoning until gray. While "browning" clean the leaves and chop the veggies.
Evenly distribute the cooked turkey to the leaves, top with diced peppers, tomatoes, cheese and salsa.
Wrap and eat! All the flavor of tacos with a fresh twist!
My Taco Seasoning
• 1 ½ tsp chili powder
• 1 tsp cumin
• 1 tsp dried cilantro
• ½ tsp onion powder
• ½ tsp garlic powder
• Ground red pepper flakes to taste
• Salt & Pepper to taste

HEALTHY SLOPPY JOES
Ingredients
• 12 ounces ground beef or turkey (90%-lean at least)
• 1 large onion, finely diced
• 2 cups finely chopped cremini mushrooms, (about 4 ounces)
• 5 plum tomatoes, diced
• 2 tablespoons flour
• 1/2 cup water
• 1/4 cup cider vinegar
• 1/4 cup chili sauce
• 1/4 cup ketchup (if possible, get organic ketchup with no High Fructose Corn Syrup)
• 8 whole-wheat hamburger buns, toasted if desired
Preparation
1. Crumble meat into a large nonstick skillet; cook over medium heat until it starts to sizzle, about 1 minute. Add onion and mushrooms and cook, stirring occasionally, breaking up the meat with a wooden spoon, until the vegetables are soft and the moisture has evaporated, 8 to 10 minutes.
2. Add tomatoes and flour; stir to combine. Stir in water, vinegar, chili sauce and ketchup and bring to a simmer, stirring often. Reduce heat to a low simmer and cook, stirring occasionally, until the sauce is thickened and the onion is very tender, 8 to 10 minutes. Serve warm on buns.
