I asked my new husband what his favorite food was, to my surprise he said baby back ribs. I had expected him to say steak or fried chicken I've seen him gorge himself with. I never fixed ribs so I've been looking for recipes on the internet.

I've about decided to use this method:
First rub the rubs with a spice mixture made of cumin, chili powder, paprika, salt and pepper. Then cook them in the oven in a tightly covered container at 250 degrees for 2.5 hours.

Then put them on the barbecue, when browned brush with barbecue sauce and grill 5-10 minutes more.

Does this sound like a good plan? What is the best barbecue sauce? What is good to serve with the ribs?

I already asked him to take me to his favorite rib restaurant so we're going there tonight. That way I'll know what his favorite ribs taste like.

Haha, how cute and how clever!!!

Honestly? What until tonight so you can see which one he orders.

In my opinion, there is either, "hot and spicy" or "sweet" when it comes to ribs...

Most common here is a plum typs sauce or one you would know Hoi Sin sauce being the favourites...

BBQ's is alot of fun and really there's so many different ways to do it. If you want, google it, see how many millions of hits and sites and just have a blast looking at different recipes and methods of bbq'ing.

Some people have made great carreers. just for kicks, tell your hubby that when he retires from the force that he can go into being a professional bbq pit master. My brother's brother in law retired from the NYPD and has spent the last 10 years or so being a professional bbq'er. He's now executive pit master for a chain of about 6 restaurants.

chisaki - good idea to take him to his favorite rib place to see what he likes! As CW and pretz have said, there are different ways and different tastes for ribs - so get an idea (or heck, even ask him) what he enjoys!

If you know his favorite place and know the "name" of the ribs on the menu you can also try doing a simple "copy cat recipe" search on the internet. MANY times you will find an equivalent recipe for the dishes available at your favorite restaurant - given its a bigger chain, and not a mom and pop type diner. I've done this with some of my favorite Olive Garden dishes, and let me tell you - the recipes are about as close to the real thing as is possible!

    Hints:

Rib meat is pretty tough, as it needs to be for the purpose it serves, so the longer you "pre-cook" them in the oven the more tender, as in fall off the bone tender, the meat will be in the end.

The recipe you are quoting is pretty straight forward and spot on for a basic method of preparation.

Some people believe it's the tenderness of the meat, while other's believe that it's the sauce that "makes the ribs". Me personally, I think it's both.

As for the sauce. Listen very carefully to what sauce he orders, remember it, then call the restaurant in a day or two and tell them you are a newly wed and you'd like to surprise your husband with his favorite meal in the very romantic setting of your own home. Would they be willing to sell you enough of their sauce to enable you to prepare ribs at home for your hubby. You may be surprised.

If not, then either look on the Internet for a "copy cat" recipe that was suggested above or go to your local grocery retailer and buy K.C. Masterpiece, it's pretty good and one of the top sellers in the country.

    Good luck!

Saturday we went to the rib place with my husband's brother and sister. We got baby back ribs, North Carolina style. The pork was shredded and they served it with bbq sauce, coleslaw, bbq beans and dinner rolls. I was surprised at the sauce, it wasn't sweet at all but had a lot of vinegar. I like mine with more sugar even though sugar is bad for me.

I've looked around the internet for NC BBQ sauce recipes and found a lot of them. I made a small batch of this one and it tasted something like the sauce they had, even better to me.

East Meets West North Carolina Barbecue Sauce

1 1/2 cups apple cider vinegar
    1/2 cup ketchup
    1 tbs brown sugar
    1 tsp salt
    1/2 tsp Cayenne pepper

His mother is coming to stay with us for a week before Christmas, I'll make the ribs then.
