    Default I need a good chili recipe!

    I've been on the search for a killer chili recipe for years... Give me what you've got. I've got a wonderful vegetarian recipe, but I want a thick meaty man chili.

    Please share! I have a feeling a couple of you may have some good ones.

    Have you tried using white beans instead of the traditional ones? Same old chili style, but you might want to add some sausage in it....also some fresh oregano and basil leaves with it. What meat do you plan to use? I always prefer mixing ground pork with turkey and brown them with minced garlic and onion.

    I generally use four types of beans. The recipe I've been using for a while, I use black beans, cannellini beans, kidney beans and pinto beans. I love beans, lots of them. I generally use 2 lbs of chuck, cubed and 1 pound of lean ground beef as well. It's good, but just not what I'm looking for.

    I make a white chicken chili to die for though.

    Throw some hot italian sausage in there also. Gives it a little kick without having to add jaleapenos.

    That's a good idea on the hot sausage. I'll have to try that one out.

    Yup, that's good. I've used Italian sausage in chili - it's yummy! (I'm seriously following this thread because at my hubby's workplace, they have an annual chili cooking contest)

    Hawaiian Chili

    1 clove garlic, chopped
    1 bottle beer
    1 can, 28 oz diced tomatoes
    2 large Maui onions, chopped fine
    3 bell peppers, chopped fine
    1 fresh pineapple or 2- 20 oz cans pineapple chunks, chopped fine
    3 skinless chicken breasts, diced
    1 large can white kidney beans, drained
    2 large carrots, chopped fine
    3 stalks celery, chopped fine
    2 jalapeno peppers, chopped (more or less to taste)
    2 tablespoons ground cumin
    2-4 tablespoons chili powder, to taste
    1/2 cup soy sauce
    3 tablespoons grated fresh ginger
    3/4 cup basil leaves, chopped
    1 cup honey
    - water, just enough to cover ingredients

    Put in a large pot in no particular order, cover and simmer all day stirring occasionally, add water if necessary. Serve over steamed rice, topped with grated Colby cheese.

    My mom don't use a recipe, but I found this one and it is close to what I remember hers was like.

    Zen is more of an attitude than a belief.
