Does anyone have any low carb recipes? I could really use some.
Thanks
carbs aren't really your enemy... it is TYPES of carbs you consume and the glycemic index of those types of foods. You don't want refined carbs and simple sugars in your diet (think anything white). Whole grains and lentils (not just wheat - key word is WHOLE grain) are a good source of fiber, and the complex carbohydrates are the energy source your muscles' need. Do be cautious of anything that touts "LOW CARB" all over the label, because they can usually be much higher in calories and fat. And that's not going to help with any weightloss goals.
On that note, here is a low carb recipe for chicken fajitas that I found on Livestrong (I love that site!). This makes 4 servings and is easy, fast and really good!
Ingredients
8 oz Chicken Breast
1 Tbsp Lemon Juice, Freshly Squeezed
2 tsp Ground Cumin
2 tbsp Paprika
1 tsp Chili Powder Medium Hot
1 Tbsp Olive Oil
1/4 cup Yellow Bell Pepper, sliced
1 cup Red Bell Pepper, Sliced
1/2 medium Red Onion (whole)
1/2 tbsp Pepper, Black
Directions
Slice your chicken breast in strips against the grain
Place the chicken in a Tupperware or air tight container and squeeze the lemon over the chicken
Season the chicken with the spices.
Add 1/2 of the olive oil to the chicken mixture
Seal the Tupperware or air tight container and shake vigorously, ensuring that all the chicken pieces are coated.
Let stand in the refrigerator for at least 15 minutes or longer to marinate.
While the chicken is marinating begin slicing the peppers and onions.
Prepare the skilled or preferably a wok with the remaining 1/2 of the olive oil and heat to medium to medium high heat
Sauté the onions and peppers. When they begin to get soft add the chicken; approximately 5 minutes.
Sauté for another 10 minutes ensuring that the ingredients are constantly being tosses so as not to over cook the vegetables.
Serve on its own as for a low carb meal or for the non low carb option serve with warm whole-grain tortillas. (you can also use lettuce leaves instead of tortillas)
