    Question Highlander now no longer lowlander, recipes are caving or not raising.... HELP!!!!

    I have many great recipes and since I have moved to about 5,000 feet above where I was before they do not raise and/or look like the flatest pancake with chocolate chips added. (eclairs and chocolate chip cookies) I may be being lazy.. and did not see any thread on this, but i did not look extensively.. I could use any advise you highlanders have for me...??? Less flour... shortening instead of butter, or mix of these..??????

    First off I recommend using Hungarian High Altitude flour, it just works better.
    Other than yeast, cut your leavening in half. Raise your oven temp by 25 degrees (unless using glass baking pans, then you can leave the temp the same)
    In general go just a little lighter on the flour and do add a little more liquid

    Here is my high altitude chocolate chip cookie recipe:
    Oven 350 degrees

    Sift together:
    2-1/2 cups flour
    1/2 teaspoon baking soda
    1 teaspoon salt
    Set aside

    Blend until smooth:
    !/2 cup soft butter
    !/2 cup olive oil
    2/3 cup dark brown sugar
    2/3 cup white sugar

    Mix in:
    4 teaspoons water
    1 teaspoon vanilla
    2 eggs

    Add flour mixture and blend well
    add 2 cups chocolate chips
    nuts to taste.

    Bake on ungreased cookie sheet approx 10 mins
