Hmmm. I'll give it a try with the beef. It sounds pretty good. Especially with the fresh pineapple!
The first time I fixed this for my husband, he looked at it and said "okkkkkk.....", like he wasn't expecting too much. After he ate it all up and practically licked the bowl I asked him how he liked it, he just said it was ok. Then when his sister was here overnight he asked me to make for breakfast. This time he ate 2 bowls of it.
Loco Moco
for each serving:
1 1/2 cups cooked medium grain rice
1/4 pound extra lean ground beef patty (or 2 x 1/4 inches slices of spam)
2 eggs
1/2 cup brown gravy, heated (homemade, canned or packaged)
dash Soy Sauce (optional)
1 green onion, minced
Fry beef patty (or spam) in a little butter until done, set aside. Cook eggs sunny side up or as desired. Layer rice in a bowl, top with beef patty (or spam) and top with gravy. Add cooked eggs on top and garnish with soy sauce and green onion.
I like to serve it with sliced fresh pineapple or papaya.
