Ok this is a recipe that my wife and friends love. Please give it a try and let me know what you think. Also please feel free to make changes if you wish, just update me as well so i can try them. I have been working on this for awhile now. The only difficulty is that i really dont use measurements, as i let my taste and heart dictate.
Ingredients:
1) Whole wheat lasagna pasta
2) Roma tomatoes ( as many as needed to build layers, at least6)
3) Fresh basil (about 1 bunch)
4) 2 Balls motzerella cheese ( for slicing and grating)
5) Olive oil
6) Balsamic vineagar
Cooking:
Boil lasagna till aldente ( till noodles have softened, but are still firm). While boiling, slice tomatoes and cheese in coins, about a 1/4" thick ( 6mm), chop or tear basil into smaller pieces ( to release more flavor). When pasta is ready, start with one layer in bottom of cassarole or lasagna pan, then a layer of tomatoes followed by a layer of cheese. After this you drissel olive oil and balsamic vineagar over the layers. Repeat until pan is full. When pan is full, i like to cover lightly with grated cheese, then place a tomatoe slice accented with 3 full basil leaves. Place in oven at about 350 degrees farenhiet ( dont remember the centigrate conversion) till all the cheese layer have had a chance to melt. By then all the flavours have had a chance to blend a little and the pasta on top will have browned slightly. When done remove from oven and let it cool a little and to give it a moment to rest and the flavours more time. Serve as you would lasagna.
My wife really enjoys this( lasagna is her fav and i cant stand it) and so do our friends. No one has ever even mentioned that there is no meat involved. Please somebody try this and let me know. Thanks.
