    Default Pulled pork, egg and cheese sandwich

    This morning I didn't know what to fix Hubby for breakfast. I wanted to make something different so I looked in the fridge for to see what was left over. I found some pulled pork that was left over from Sunday's dinner party. So I decided to make him a sandwich. He ate 2 of them and wanted more but I reminded him of his diet.

    For each sandwich I used:
    1/3 cup pulled pork
    1 egg
    1 slice cheddar cheese
    1 whole wheat burger bun
    - mayonnaise
    - butter

    Warm pulled pork in the microwave. Toast the bun. Spread mayo on bun.

    Heat butter in non stick fry pan over medium/low heat . Crack egg into butter, cook until bottom is set. Turn egg and cook until bottom is set. Flatten egg with spatula, this will break yoke. Cook until yoke is just set, season egg with salt/pepper.

    Add cooked egg to bottom section of bun, top with pulled pork, cheese and top section of bun. Enjoy

    Hubby and I make meat, egg, and cheese sandwiches sort of often. We like to put them on biscuits (with scrambled egg) or english muffins (with fried eggs - I leave the yolks unbroken so that they get a little messy.) Bacon or pancetta makes a good meat and we like Velveeta for the cheese.
    I'll have to try some pulled pork instead. Did you use barbeque sauce when you cooked it originally?

    I often make him English muffin and egg sandwiches with some meat (bacon, ham etc). I know he would like biscuits but I would have to bake them first and that is a little too much trouble for one person.

    We picked up the pulled pork from a local BBQ restaurant along with ribs and chicken. The sell it by the pound.
