I'm at home in Hawaii for a visit, my Mom made yakitori today. I was in heaven, the aroma is even better than the taste. I had to shoot extra insulin I ate so much.
Yakitori:
1 pound boneless/skinless chicken thighs
1 pound chicken livers (optional but I love them)
2 tablespoons soy sauce
- rice bran oil (or other oil)
- 8" bamboo skewers
Sauce:
1 cup Mirin
1 cup soy sauce
1/2 cup water
3/4 cup brown sugar
2 cloves garlic, grated
1/2 inch fresh ginger, grated
Mix all sauce ingredients in a sauce pan and bring to a boil, stir until sugar is dissolved. Lower heat to a slow boil and cook until mixture is reduced to a syrup.
Meanwhile, cut chicken and livers into 1 inch cubes. Mix 1/4 cup of yakitori sauce with 2 tablespoons soy sauce and 1 tablespoon rice bran oil, add mixture to chicken/liver cubes. Mix well to coat chicken. Let marinate for 15-30 minutes. Soak skewers in water to prevent burning.
Skewer 5-6 pieces of chicken and/or liver on each skewer. Mom uses 2 hibachis at the table to cook them fresh but can be cooked in advance on an outside grill or even in a stove broiler. Grill until done, then brush with sauce. Serve with rice or just eat them as a snack.
