    Default easy curry you probably already know

    This is a recipe I have for a very easy vegetarian curry, and it's low fat too. I'm not much of a whiz in the kitchen so everything is very simple but very tasty.
    Spinach and sweet potato rogan josh.

    1 onion
    1 sweet potato
    Spinach (pre packed from supermarket so you can add as much or little as you like)
    bean sprouts
    rogan josh curry paste
    1 tin of chopped tomatoes

    Peel and cube the sweet potato, size of cubes is personal choice...boil to your liking (I normally like some resistance to it instead of mushy potato).
    When sweet potato is almost ready, chop the onion and fry in a wok using low calorie spray (such as fry light). Add bean sprouts and cooked potato. Stir in two/three tablespoons of curry paste to taste and add the tinned tomatoes. Add in desired amount of spinach.
    Allow the curry to simmer for about 10-15mins to let flavours develop.
    Serve with rice or cous cous.

    This recipe usually has about 4 servings.
    If you want to add different flavours and textures, use half a sweet potato and replace the other half with butternut squash.

    I love curry, I often fix pork or beef or chicken curry for me and my husband. At home my Mom fixed a vegetable curry sometimes but i have never had it with sweet potatoes, bean sprouts and tomatoes before. I'm going to try it but I've not seen rogan josh curry paste. I usually use Sun brand curry powder or a Japanese instant curry roux.

    Zen is more of an attitude than a belief.

    I second the use of Sun Brand Madras Curry Powder. I checked on the can and it said made in the USA, so it may not be available. I think I remember reading that the components are imported, but the curry powder is made by a company in New York City under license. Maybe the original is available in other countries. Restaurant curry in the USA often has diced green pepper as well as diced onion.

    not sure if you get it in USA but i use the pataks brand of curry paste for this recipe.
