    Yakisoba (fried noodles) can be a quick and easy lunch. Yakisoba is usually made from Chinese wheat noodles but a good substitute is Ramen. Beef Ramen is best.

    1 pkg Beef Ramen
    2/3 cup water
    2 teaspoons salad oil
    1 green onion, minced
    optional - leftovers of almost any kind (meat and/or veggies) or fried eggs
    optional - fried eggs
    optional - diced fried spam lite

    Heat water and oil in a non-stick skillet. Add ramen and stir until most water is absorbed. Add green onion and 1/2 of the seasoning packet. Stir fry until sauce is absorbed. If you like it crispy, cook shaking pan to prevent sticking, until bottom noodles are browned and crispy. Flip over and lightly brown the other side. Add whatever leftover toppings you want and stir to heat .

    Another option (for breakfast) is to place the cooked noodles on a plate. Top with 2 eggs fried over easy. Add a dash of soy sauce over the eggs.

    Zen is more of an attitude than a belief.

    You can experiment with wraps (tortilla shell and lettuce wraps are my favorites), pasta salad and fresh fruit are my saviors when I need to prepare easy lunches.

    Hummus, veggies and cheese are great lunch substitutes for sandwiches, especially since you can pop them into a baggie and you're good to go. Sometimes, that's not filling enough for me though. I've started doing some work for Wasa and got the chance to try they're crispbreads and now I swear by them. You can top them with hummus or make a faux sandwich with turkey, avocado and cheese. Gives these items some crunch and definitely makes them more filling since Wasa's full of fiber.
