This is so yum. I usually add a small tin of tuna for that little bit extra. And mostly use pumpkin or sweet potato instead of ordinary potatoes.
2 medium potaoes, cubed
2tblsp canola oil
1 medium onion, diced
1tsp minced garlic
2tsp curry powder
2 tsp garam masala
1 tsp ground ginger
1 tsp cumin
1 can (10.75 oz) tomato soup
1/2 cup cream or milk
1 can (12 oz) chickpeas, rinsed and drained
Cook potatoes until just tender. Set aside.
Cook onion and garlic in oil until done. Stir in spices and salt. Cook for one or two minutes, stirring. Pour in soup, milk and chickpeas. Stir in potatoes.
Simmer 5 mins.
Great served with rice or on its own.
I use dried chickpeas, brown rice, and instead of soup I use tomato paste and sauce. This curdles but when cooked for a while is not noticable.

Interesting! Quite different than the one I made. Mine was a spicy chickpea curry (cayenne and jalepeno!) and turned out quite good. I'll have to try your recipe sometime!!! Yum!

I recently stopped eating meat so this recipe is welcome. I have always liked curry so I'm going to try it, thanks for the recipe.

I think I'll try this tonight! Any substitution recommondations for the garam masala?
Oh wow this is good! I altered the recipe slightly based on what I had around, here's what I came up with.
- I subsituted extra garlic in place of an onion (I love them, but my husband can't stand them)
- In place of the garam masala, I used 1/8tsp of cinnamon, 1/2 of corriander and a generous sprinkle of dried chillies. I also doubled the amount of ginger (freshly zested from a frozen root).
I simmered it on low heat for about 20 minutes to really let the flavours come through, I sprinkled in a touch of salt and a great deal of pepper to help the flavour come through. I added some tuna in as well and just let it simmer some more. It tastes great and now I'm just waiting for my couscous to finish!
