This sounds really good! I have a severe intolerance to gluten, so I wonder if I could replace the couscous with GF quinoa.... what would that do to the prep/cooking time?
Very easy and VERY satisfyingA yummy way to eat meatloaf without all the added fat and calories.
Ingredients:
1 pound lean ground turkey
1 medium zucchini, shredded
1 cup finely chopped onion
1 cup finely chopped red bell pepper
1/3 cup uncooked whole-wheat couscous
1 large egg, lightly beaten
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt
1/4 cup barbeque sauce (optional)
Directions:
1.) Preheat oven to 400 F. Generously spray a non-stick muffin pan with cooking spray.
2.) Gently mix turkey, zucchini, onion, bell pepper, couscous, egg, Worcestershire,mustard, pepper and salt in a large bowl, preferably with your hands, without over working. Equally divide the mixture among the muffin cups. Spread barbeque sauce on top of each loaf (if using).
3.) Bake until the meatloaves are cooked through, about 25 minutes, or an instant-read thermometer inserted into the center registers 165F. Let the loaves stand in the pan for 5 minutes before serving.

I would try it and experiment! You can definitely substitute quinoa for the couscous. But prep time may be longer. I *think* you might need to cook quinoa before adding it to the meatloaf mix, since the grains of quinoa are harder and have a longer cooking time than pasta-esque couscous, and you don't want crunchy little quinoa grains in your meatloaves
Once you've got that figured out, the cooking time of the meatloaves themselves won't change.
