1 lb jenny o turkey sausage patties
1/2 large onion, diced
3 stalks of celery, chopped
1 32 oz container of chicken broth
6 red potatoes, approx 1 1/2 inch cubed
1/2 cup reduced fat parmesean cheese
8 oz mushrooms, sliced
3 cups spinach, shredded
cut each sausage pattie in 1/4 and roll each 1/4 into a little ball. preheat nonstick skillet and then fry all 48 balls till cooked thru. remove sausage balls from pan and set aside.
in the same pan with heat on high, add onions and brown for about 5 minutes, add celery and cook for another 5 minutes. add a little (about 2 tablespoons) of the chicken broth and let the onions and celery steam and fry.
add back in the sausage balls, and stir. add a little more chicken broth. cook for another 5 minutes or so. add 1 cup of the chicken broth and let it come to a slow boil for about 5 minutes. this will let the flavor from the sausage go into the chicken broth. then add the rest of the chicken broth.
add potatoes and bring to boil. reduce heat and simmer, covered, for 25 minutes. take fork and check to see if potatoes are cook. if so, add the parm cheese, mushrooms, and spinach. i like to add a little pepper too. cook on low for another 10 minutes, stirring occasionally.
this makes 4, very large servings at 360 calories per serving.
