I have 2 recipes that the husband and I enjoy.
Roasted Brussels Sprouts:
Toss 1 1/2 pounds halved Brussels sprouts with 1/4 cup olive oil
Add pinch of: salt, pepper, red pepper flakes.
Pan roast them for 1min on each side.
Place in oven for 20-30min 400+
Additional: Add grated SHARP cheese *or* white wine vinegar and honey.

Sounds so simple and delicious. I may try it with what at present is my favourite oil, rich bran with lime instead of the olive oil. Don't really know if it is as "good for me" as olive oil, but it sure tastes better!
try frying up some turkey bacon and putting it on the brussel spouts then roasting them. then there is not need to add salt. just another wonderful variation!
