    Default Basil Arugula Salad

    I made this recipe up on one of my "create a meal" nights.

    Its absolutely amazing, healthy, and filling!

    You will need

    Olive oil (3 tbsp)
    2 tomatoes, sliced how you'd like
    dried egg noodles, or spaghetti noodles (5oz.)(I use wgg white noodles, almost as thin as angel hair)
    2 Garlic cloves, peeled and minced (use more garlic if you'd like...I used 4 cloves)
    Basil (roughly chopped, about 2 tbsp)
    Feta cheese (4 oz, crumbled, but you can add however much you'd like)
    Arugula or lettuce leaves


    Pour 1 tbsp over the tomatoes in a shallow baking dish, put in the oven (350 degrees F) for 10 minutes


    Boil the pasta accordingly, drain, and set aside. Meanwhile, put the garlic and basil into a bowl, add the remaining 2 tbsp of olive oil, and toss. Simmer in a saucepan, then add to the noodles, and toss again.

    Add the tomatoes (and their juices) into the pasta mixture, toss again.

    Add feta cheese, and arugula, toss, add some pepper to taste, and ENJOY



    you can add almost any kind of cheese, instead of feta. Its also great with chives, bacon, cilantro, or canned tomatoes.

    This will keep in the refrigerator for 24 hours. You can have it either hot, or cold. Both are delicious

    I have never really liked feta but now I find if it is in a salad I will pick until I get every last minute piece, it is so good lol. Would goat cheese work in this as well?

    What could I substitute for tomatoes?

    I am really not a fan of raw or cooked whole tomatoes, I can eat them mushed in tomato sauce no problem but not if it is a chunky sauce with whole crushed tomatoes (that soggy mush texture is just gross to me lol). I suppose I could really mush the tomatoes right?

    Goat cheese is pretty good in it! Instead of using tomatoes, I'd use whatever kind of citrus veggie you'd like. I tried it with asparagus....still good!!!
