Cover an oven proof dish with breadcrumbs. If you make your own as I do, add some basil in the blender.
Layer some sliced tomato over the crumbs.
Layer some capsicum.
Add sliced onion.
Layer more breadcrumbs and repeat.
Repeat layers until enough for meal ending with breadcrumbs. Oh and don't forget the pepper!
Bake for approx 45mins.
Makes great use of the excess tomatoes that I grow in a delightfully tasty way.
