    Default Turkey Meatballs

    Tried a new recipe Sunday. It was easy and yummy. I love substituting ground turkey for beef, but never thought about turkey meatballs for some reason...

    Meatballs

    1 lb ground turkey
    1/4 c grated Parmesan
    1 egg
    1/2 tsp dried basil leaves
    1/2 c bread crumbs
    1/4 c dried parsley
    1/2 tsp dried oregano
    **On the herbs, I used more than recommended by recipe and it was good, but I love spices and herbs

    Mix and shape into 1 1/2 inch meatballs. Saute in large skillet until browned and no longer pink.

    Sauce

    16 oz canned whole tomatoes
    1/2 c chopped onion
    1 tsp sugar
    1 1/4 c chicken broth
    6 oz can tomato paste
    Minced garlic

    Add all the sauce ingredients to the pan with the meatballs. Bring to a boil. Simmer covered until sauce thickens, about 30 minutes. Salt and pepper to taste. Serve over hot pasta.

    Some suggestions-

    Boil your noodles in chicken broth, or add 4-5 chicken bouillon cubes to the water. Gives the noodles some extra taste.

    Also-

    When I make my spaghetti, I make it the night before I plan to eat it. I combine the noodles with the spaghetti sauce and meatballs in one big sealed container and let it sit overnight in the fridge.

    The noodles absorb so much flavor from the sauce its amazing.

    Try it sometime.

    Hmm - might have to try the broth thing.

    However, not with you on the whole mixing the noodles with the sauce. lol - can't do it.
