    Default Hummus?

    Anyone have any good homemade hummus recipes? I know it's chickpeas and olive oil normally but anyone know of the best proportions of each, what spices are good, etc??

    I've been buying this quite a bit for when friends come over, but I'd like to try to make it next time so I can experiment with new flavors

    It depends on the texture you like and how much sesame paste (tahini) you use with it. You need to add some lemon juice - fresh is best.

    You can also add curry powder, it gives a new dimension to it.

    My mom puts extra lemon in hers and makes an olive topenade (Absolutely no idea how to spell that!) to go with that is absolutely amazing with the hummus. I've found that the best recipes come from adding your own touches, spices you are particularly fond of. For instance, I put lemon or lime juice on almost EVERYTHING. And chili powder.

    I tried to make hummus once (without the tahini, can't find it in my neck of the woods) and it went to disaster. Are you supposed to shell all the chickpeas? Or does a good food processor take care of that?

    You can also do a roasted red pepper...MMMMM, oh but that is good stuff!

    It's a smooth mixture of chickpea (garbonzo bean) and sesame paste (tahini), with some garlic and lemon added. You usually eat it like a dip with flat bread of some type or like a dressing with falafal.
