Caramel
Does anyone have a good recipe for making caramel? I love to bake and tried making millionairs shortbread at the weekend.I wanted to make my own caramel filling but the stuff would not set. Has anyone made this with success?

you take equal parts sugar and water and cook them till its medium golden brownish and then pour it onto a cookie sheet that is covered with wax paper (makes it easier to get off) then put it to the side and let it sit it works better in the fridge takes about an hour in the fridge for it to set.

Hi,
Actually I read this recipe in one of the cook books. You can try this -
Caramel Peanut Recipe
one cup cooking oats
packed brown sugar
Take some cooking oats
packed brown sugar
all-purpose flour
butter, melted
1/2 teaspoon baking soda
1/4 teaspoon salt
(14 ounce size) caramels
milk
semisweet chocolate chips
Cup chopped walnuts
Heat the caramels and milk together in the top of a double boiler over simmering water until the caramels are melted, stir constantly.Remove and stir in the butter. Add the powdered sugar gradually, stirring until smooth. Stir in the peanuts.Spread in a greased 8 by 8-inch pan. Chill, covered; cut into squares for serving.
