  • New Egg Recipes

    Im looking for egg recipes, please give me suggestions on how to make different dishes using egg as the main ingredient, my family loves eggs for breakfast but i dont seem to have many ideas for them i want to change the simple scramble eggs and do something more gourmet/healthy/delicious/fun please help.



  • Omelets come to mind, that and what we call French Pancakes or others call Crepe's..


    Both are very easy to make.
    With the Omelet, you can add all kinds of ingredients. Sausage, Bacon, Ham, Steak, Onions, Green and Red Sweet Peppers, Cheeses.



    With French Pancakes, that's an easy recipe too. A few years ago, my daughter had to take a Breakfast item that she had made for a Cooking Class in High School. She didn't want to take just eggs or potatoes or toast or plain pancakes .

    So I taught her how to make " French Pancakes ". AKA Crepes
    There were only 12 in the class , plus the teacher .

    So this is what we did ( shorten amounts for less people )

    1 Dozen large eggs
    1/4 cup of water
    1/4 cup of flour

    Spices = Cinnamon , Nutmeg or Apple/Pumpkin Pie Spice. Powdered Sugar.

    1 Jar of either or Strawberry, Raspberry, Peach Jam. Make sure it's Jam ( Preserves ) Not Jelly
    1 tub or can of Cool Whip type Topping or that Cream whip in the Can .

    Fresh Fruit if wanted for Topping and Visual Appeal .

    Take the eggs and beat them well, in a Bowl ...
    Then add the water and beat again, then slowly add the Flour and beat/ mix well also until no lumps .Then add the spices and mix again.

    ~ Note ~ Daughter mixed water and flour first then added to eggs . It was much easier not to have Lumps that way . But you have to whip them a but more to create the fluffy eggs.

    Have ready a fry pan on very low with a bit of Butter to coat bottom of pan , if a non stick pan you can eliminate the Butter or use a Butter Spay like PAM .

    Pour just enough Mix in the pan to cover the bottom, raise heat to just above Low but not all the way to Medium. Uncovered, let all " Bubbles " cook out, Flip the crepe and cook other side. this takes usually about 2-3 minutes total, Take out crepe,and set on wax paper, Plate or Cookie Sheet and start the next one.

    While the new one is cooking, take the Finished one lay it flat on a Cookie sheet / Plate ETC..take the Jam and spread it thin or medium, like you would on Toast.
    Roll ( not fold ) the Pancake up, Turn it to make sure edge of roll is down. The Picture shows the edge up, But I found you can " Stuff " more Fruit Jam in if the edge is Down and at bottom on plate

    Put on platter or Flat Biscuit/ Cooke pan, cover with Paper towel/or clean dish towel.By this time it's time to flip the new one, Do the same,as before, start the third and so on.

    Once you have all you are making done and ready to serve, Take the Cool Whip or Whipped canned cream, Spread or Spray the tops of the Crepes,length wise ( end to end) then put a dollop of Jam or even Fresh sliced " Fruit of Jam ) on top of the whipped cream/Topping.
    If you wish you can add a sprinkle of the Cinnamon/ Pie spice or even those Cake Sprinkles, Chocolate/Colored ones . Or Drizzle Chocolate or Strawberry syrup ( Ice cream / Flavored milk kind ) .






    Once you get the hang of them, you can make quite a few in less than 20 mins. It's faster if you have your Hubby or the kids do the Spreading of Jam and rolling and Toppings . Plus they have fun with it .
    These don't taste like Pancakes as there is very little Flour in them ,they are More Eggy, the flour is more to hold them together so they don't rip or turn to scrambled and be Firm , rather than for taste.

    You can do this for 1 or 20, just don't put the whipped cream on until just before serving . It Melts .. lol
    She Got an A + and had none to bring home .. lol

    • Here are some of my favorite egg recipes! I eat them a lot as a main source of protein... these could be eaten for breakfast, lunch, dinner, basically whenever you like!

      Egg in An Avocado Bake
      Servings: 1

      Ingredients:
      1 avocado
      1 egg
      Preferred spices (I just use salt/pepper, but you can sn****** it up however you like)

      Directions:
      1.) Preheat oven to 425F. Leave the pan in the oven.
      2.) Slice an avocado and remove pit. 3.)Take pan from oven, put avocado half in pan, crack egg into center of avocado. Sprinkle with spices of choice.
      4. Place in oven and leave until the egg is cooked as done as you desire. Serve.

      Eggs In A Nest
      Servings: 1

      Ingredients:
      2 eggs
      1-2 cups of your favorite greens (spinach, kale, chard, mustard greens)
      1/4 cup water for steaming

      Directions:
      In a small saute pan, add the lightly torn greens and water. Cover the pan to steam the greens. When steamed, use the back of a spoon to create a divot in the center of the greens. You may want to make a divot in the greens for each egg. Crack open the egg into the divot, again covering the pan to allow the egg to cook. Add sea salt and pepper and other spices to taste.

      Prosciutto & Egg Cups
      Servings: 6

      Ingredients:
      Cooking spray
      6 thin slices of prosciutto
      2 ounces of fresh mozzarella cheese, torn into small pieces
      3 large basil leaves, torn
      6 eggs
      Fresh ground black pepper

      Directions:
      1.) Preheat oven to 375F.
      2.) Spray a 6 cup muffin tin with cooking spray. Fit each cup with a prosciutto slice. Divide half the cheese and basil among the cups. Crack an egg into each cup and nestle the rest of the cheese and basil around it. Bake until set, about 15 minutes. Let eggs rest for 5 minutes. Season with pepper. Run a knife around each egg cup to loosen egg. Serve.

      Scrambled Egg Salad
      Servings: 1

      Ingredients:
      1 Whole Wheat Pita
      2 Organic Scrambled Eggs
      1 Slice Mozzarella Cheese
      HUGE Handful Sliced Mushrooms
      HUGE Handful of Spinach
      1 Piece of Fruit

      Directions:
      Add salsa, salt & pepper to eggs for extra flavor!

      Quiche
      Servings: 4

      Ingredients:
      6 eggs
      3-4 cups fresh spinach
      1 cup mushrooms, sliced
      1/2 onion, diced
      5 ish cherry tomatoes, halved
      1-2 garlic cloves, minced
      Olive oil

      Directions:
      1.) Beat eggs in large bowl and set aside.
      2.) Saute onion and garlic until just golden brown. In separate saute pan, put a splash of olive oil in the bottom. Saute mushrooms, garlic and spinach. When ready, add to eggs.
      3.) Spray glass pie pan and put saute onions and garlic in bottom of pan. Pour egg/veggie mix on top. Drop in cherry tomatoes. Sprinkle with fresh black pepper.
      4.) Cook at 425F for 20-25 minutes, or until toothpick comes out clean from center.

      Get creative and add other meats and veggies!

      • This recipe is good. I made mine with spinach and feta cheese and no zucchini and no bacon.

        Egg Cupcakes
        10 -12 eggs whisked well
        1 green onion
        2 zucchini
        3 big handfuls of spinach
        1/2 a jar of roasted red and yellow peppers
        6-8 slices of COOKED bacon
        sea salt and black pepper to taste

        Preheat oven to 350 and grease with olive oil two muffin pans. Whisk all your eggs in a big bowl. In a food processor throw in the green onion, zucchini, bacon, and peppers and process until finely chopped but NOT smooth (yuck…). Add this mixture to your eggs. Throw your spinach into the processor and finely chop and also add to your eggs. Mix the egg mixture well and using a 1/4 measuring cup, fill the muffin pans (you’ll be able to make 18-20 cupcakes). Bake for 20-25 minutes or until the eggs are set in the middle. These are great to take on the go and I like mine with some sliced avocado and green salsa.

          • Egg and potato: cut potatoes into small pieces and fry it with the egg on the fry pan with with oil, salt and spice as you like! Pour the egg after crushing later on the potato...

            • Another way to peel an clean hard boiled egg

              I just thought I would mention how I have found how to peel an hard boiled egg without losing half the egg.
              Put salt in the water-bring to boil and boil eggs for 20 minutes.Take eggs from water and refrigerate.They will peel easily once cold.
