  • Mushroom Lovers!

Since I teach Wilderness Survival I know what Mushrooms a person can eat or not and just to advise members...even if you have a good book...with color pictures....do not pick and eat Wild Mushrooms unless you first start going out with either a GUIDE or perhaps someone's GRANDPA....who has been picking and eating specific mushrooms for over 60 years!!!

I know which ones to pick and I also augment my bounty with some from the store such as Button, Crimea, Oyster...etc.

GRILLED RARE TO MEDIUM RARE VENISON FILET OR BEEF FILET MIGNON 4 inches thick....placed upon a bed of WILD RICE....and the whole thing covered in Venison or Beef Mushroom Sauce loaded with Mushrooms and fresh chives topping it.

I rub my meat with a variety of spices such as Cayenne, Salt, Onion and Garlic Powders, Thyme, Patrica and I place Hickory and Mesquite in my Gas Grill soaked in water and placed in foil to both smoke/grill the meat.

I have found the easiest and simplest way to make good Wild Rice is to use Uncle Ben's.

Now...slice up all mushrooms but no too thin.

If you save beef or venison fat like I do...render some down and then add all the different mushrooms you have and add butter and on medium heat cook in fat and butter.

Add a teaspoon of cornstarch and mix it in with Rose wine.

Add mix to mushrooms along with one Beef and one Knorr's Mushroom Bullion Cube.

Keep mixing to make Mushroom Gravy.

Place Filet atop rice and cover in Gravy...chives on top.
